Sharpening a knife: Always place the sharpening stone on a firm and flat surface. Apply a small amount of sharpening oil or water to the sharpening stone (never sharpen on a dry stone). Place the blade on the stone at the required angle, for example 20 degrees. With pressure, draw the blade across the stone, alternating sides of the blade until the knife is sharp. Use the side with grit 100 for coarse sharpening and the side with grit 240 for finer sharpening. After finishing, rinse the stone under running water and after 3–4 uses, also scrub it under running water with soap and a stiff nylon brush.
