WARNING
Carbon steel, unlike stainless steel, is prone to corrosion if not properly maintained. Care of a carbon steel knife is relatively simple and requires minimal time. Do not leave the knife wet or damp, as this can lead to rust stains. After each use, especially when cutting acidic items, the knife should be thoroughly washed with warm water and immediately dried clean, preferably with a clean cloth (a dirty cloth may contain elements that could accelerate the rusting process). Oiling a carbon steel knife also helps protect it from corrosion.
